From a nutritional point of view, legumes are rich in protein, slow-absorbing carbohydrates and fiber, as well as being notable for their content of vitamins B1, B2, B3 and B6, folic acid, vitamins A, C and K, potassium, phosphorus, magnesium, iron, copper, zinc and manganese. Adzuki beans are characterized by less fermentation at the gastrointestinal level, favoring better digestion compared to other legumes, hence their growing demand for those who want to benefit from all the properties of legumes without experiencing unnecessary gastrointestinal discomfort. It is recommended for use in all kinds of recipes, both sweet and savory: soups, feijoadas, chillies, stews, stews, pâtés, sweet creams and fillings. Before any preparation, they must be soaked for 6 hours and then cooked in the pressure cooker for 20 minutes, without salt.
